Rice pudding for a rainy day

1 cup cooked Basmati rice
1 cup milk
1/2 cup cream
1/4 cup honey
1/4 cup raisins
1 tsp. vanilla extract
1/4 tsp. nutmeg
1/4 tsp. cinnamon
2 Tb. cornstarch

In a medium saucepan, blend cornstarch and milk until smooth. Add remaining ingredients, stirring constantly until pudding thickens (it will continue to thicken as it cools, too).

There’s something about the creamy, sweet, taste of this pudding that soothes even the crankiest toddler.

  1. Kim, the Bramble Crumble recipe is terrific! We always have something in the summers…Saskatoons, then black rasperries, then sweet cherries, then huckleberries, I bet you could even use apples. We have Macs that are lovely. I will have to try Bramble Crumble with EACH ONE. Thank you!

  2. I tried your recipe and it’s wonderful! Thank you. I think my favorite comfort food is rice as well, but fried rice—with lots of chilis . . the endorphines kick in and I cheer up.

    I think for the rest of my crew it would be hot chocolate–always nice on a cold and/or rainy day.

  3. Cinnamon buns. Chocolate croissants. Cajun bread pudding. Molten lava chocolate cakes.

    Mmmmm, rice pudding. The family we lived with in Norway had this for breakfast every morning. With a big spoonful of butter on top. Yum.

    Warm baked goods are where it is at in this family.
